Like the United States, the Philippines is a melting pot of cultures. Tagalog, the Filipino language, belongs to the same family as the languages of Indonesia, Java, and Sumatra. Unlike the people these three countries, Filipinos eschew chili peppers.
Large parts of the Filipino heritage also come from Spain and China . Adobo is a Spanish word, but the Filipino version of the dish is nothing like the Mexican version. Pancit is a dish reminiscent of chow mein, but it’s made with rice noodles and served with a squeeze of lime.
Filipino food should be served with Milagrosa rice, which is simply the local name for Jasmine rice from Thailand. Milagrosa rice has a special aroma that sets it apart from ordinary long grain rice, don’t settle for anything less.
