Indian curry is mildly intoxicating. I mean that literally. Indian food may not be the hottest cuisine in the world, but it’s probably got the most spices. The spices in curry have medicinal value and that’s where the buzz comes from.
Indian red pepper is known as degi mirch. It’s less hot and more aromatic than cayenne pepper. If you use cayenne pepper as a substitute, your Indian food will come out far too fiery. Hot paprika, however, would be an acceptable substitute.
The correct variety of rice to serve with Indian food is Basmati rice. It has a special aroma and texture that set it apart from ordinary long grain rice. Don’t settle for anything less.
